The quality of the tracks is very variable.

Agree, and this is what I find most bothersome. There is no consistency. Some tracks sound quite OK, about the quality of the Rhino B-H tracks. Others are scratchy and shrieky (new cartoon characters?); and some tracks are near mono, or switch to near mono within the track ("Pillar of Salt"). Why? I've never heard a ST so variable; it could as well have been recorded in 10 different studios.

But we must be thankful for all we get.

That would only be true if we were getting it for nothing. Personally I feel like being grumpy and ungrateful.

And the "Bonus tracks" do not sound like Rózsa at all, but more like a Hora from Stanley Black's "Spirit of a People".

Without the excellent recording quality.
