There would seem to be a logical flaw here. How could you think something was evoked if you didn't know what that something was? That's like saying I think this ice cream tastes like peppermint, but I have never tasted nor smelled peppermint and have no idea what it's like. Or am I missing something here?

Yes.... you are missing something here. The subliminal connections that link sound colour to imagery etc. and the link between chordal and interval progressions and cultures for a start. The quickest detective work for a composer may well be intuitive rather than just causal. And what tells you 'this is just right'. But that's for you to find out. And you could've said, 'this wine tastes like a liqueur' or 'this cheddar tastes like brie' or 'this onion tastes like garlic'. But it had to be ice cream and peppermint, didn't it? I'm trying not to make the links here ....

Walton often said he didn't much care for his 'Belshazzar's Feast' and that he had no enthusiasm to hear it performed. Imagine Rozsa's version .........
